Chocolate hazelnut dessert in a glass

Loacker wafers, hazelnut mascarpone mousse and chocolate ganache make this creamy, delicious dessert irresistible. No oven needed.

Loacker has been my favorite wafer brand since forever. Seriously, I remember my first time trying the classic hazelnut wafers in red packaging when I was still in primary school. I’ve never been a fan of wafers, but man are they different. The texture is the lightest and crispiest thing ever, and the deep hazelnut flavor makes this wafer the best of the best, for me. Everyone is of course entitled to their own opinion, but I would never talk so highly of something I don’t truly love and trust in. If you have never tried anything Loacker, I recommend doing that and thanking me later. I suggest the classic hazelnut flavor wafer to try first.

Now that I’ve expressed my sincere love for Loacker, can you imagine how thrilled I am to collaborate with them? Very.
I’m also very happy with how this dessert came out. I made 2 very rich glasses, so this dessert is perfect for valentine’s day. If you can’t eat a lot, 1 glass would be enough for 2 people, or you can make 4 smaller portions.

Ingredients

(makes 2)

Ganache
130 g whipping cream
100 g semi-sweet chocolate (or your favorite)

Hazelnut mascarpone mousse
140 g mascarpone
70 g powdered sugar
75 g Loacker hazelnut spread
180 g cold whipping cream

80 g Loacker napolitaner with hazelnut cream

+decoration:
whipped cream
roasted hazelnuts
hazelnut spread
Loacker mini

Instructions

Ganache
Heat up the whipping cream until almost boil, remove from heat and add chopped chocolate. Leave for a minute, then mix until you get a glossy, shiny ganache.

Hazelnut mascarpone mousse
Crush the Loacker wafers into small bits and set aside.
Mix mascarpone with powdered sugar for about 2 min, or until creamy. Add the hazelnut spread and mix to combine. Pour in the cold cream while mixing the mascarpone with an electric mixer. Mix until the mousse can hold its shape.

Assemble
Prepare 2 glasses (300 ml or more). Pour a bit of ganache in the glasses, then put a quarter of the crushed wafers in each glass. Pour some ganache on top just to cover the wafers. Now pipe in the mascarpone mousse, top with some ganache, then the rest of the wafers, ganache and mousse again to the top. Put in the fridge to set for at least 2 h. Decorate with whipped cream, chopped roasted hazelnuts, hazelnut spread and a Loacker mini. Enjoy 🙂

Kremast mascarpone mousse z lešniki, čokoladni ganache in Loacker napolitanke sestavljajo to sladico v kozarcu, ki se ji človek težko upre.

Recept je narejen za Loacker, ki je moja najljubša znamka napolitank odkar pomnim. Spomnim se celo, kako presenečena sem bila nad njimi prvič, ko sem jih probala. Nikoli nisem bila ljubitelj napolitank, do osnovne šole, ko sem prvič probala klasične Loacker napolitanke z lešnikovo kremo. Enostavno drugačne so od vseh drugih. Narejene so iz najbolj lahkega in hrustljavega vaflja, ki sem ga kadarkoli probala in kvalitetne lešnikove kreme, ki da napolitankam svojevrsten okus. In verjemite mi, ko rečem, da nikoli ne toliko hvalim hrane, če mi res ni tako zelo dobra. Če ste jih že kdaj jedli, veste o čem govorim, če pa ne, jih srčno priporočam in obljubljam, da ne boste razočarani.

Zdaj, ko sem izrazila svoje iskreno naklonjenost Loackerju, si predstavljajte kako vesela sem, da lahko z njimi sodelujem. Zelo!

Zelo sem zadovoljna tudi s tem, kako je izpadla ta sladica. Recept je sicer za dva kozarca (valentinovo prihaja), ker je pa zelo nasitna, jo lahko porazdelite tudi v 4 kozarce.

Sestavine

(za 2 kozarca)

Ganache
130 g sladke smetane za stepanje
100 g temne čokolade (ali vaše najljubše)

Mascarpone mousse z lešniki
140 g mascarponeja
70 g sladkorja v prahu
75 g Loacker lešnikovega namaza
180 g hladne sladke smetane za stepanje

80 g Loacker napolitaner z lešnikovo kremo

+ dekoracija:
stepena sladka smetana
praženiki lešniki
Lacker lešnikov namaz
Loacker mini

Priprava

Ganache
Segrej smetano do skorajšnjega vretja, odstavi z ognja in dodaj nasesekljano čokolado. Pusti za minuto, nato pa mešaj, dokler ne dobiš sijočega, homogenega ganacha.

Mascarpone mousse z lešniki
Zmešaj mascarpone s sladkorjem v prahu, dokler ni kremast, približno 2 minuti. Dodaj lešnikov namaz in premešaj. Med stepanjem mascarponeja z električnim mešalnikom, dodajaj sladko smetano in stepaj, dokler mousse ni stabilen oz. drži obliko.

Zdrobi napolitanke.

Sestava
Pripravi dva kozarca (300 ml ali več). Sestavi sladico tako, da začneš z nekaj ganacha, dodaš četrtino zdrobljenih napolitank, spet nekaj ganacha, nabrizgaš mousse, dodaš ganche, drugo četrtino napolitank, ganache in nazadnje nabrizgaš mousse do roba kozarca. Postavi v hladilnik za vsaj dve uri. Pred postrežbo okrasi s stepeno sladko smetano, praženimi lešniki, lešnikovim namazom in Loacker mini. Dober tek 🙂
