Peach cobbler

Peach cobbler is an American dessert that I had my eye on for quite a while and finally, the time has come. Of course, I wanted to make it when peaches were in season, so when I realized that summer is slowly saying goodbye I took action (you can also use canned peaches). And wow, it’s so easy and quick to make, definitely a dessert that you can whip up shortly before the guests arrive.

I used Cointreau liqueur because since I got it, I’ve been adding it to pretty much every dessert, haha. It makes everything better you know, just like vanilla extract.

Like with many classic dessert recipes that originated somewhere in particular, I searched the internet for recipes, looked at the basics and then made my own recipe. Some cobblers have a more flaky biscuit on top and some more of a crumbly one. I knew how I wanted mine to look like, so I eyeballed the texture of the dough and it came out exactly how I wanted. It’s so nice having knowledge about the science of baking, ingredients and how they act together. I think this is how grandmas are, with so much experience they whip up the best desserts in no time and by eye, no recipes needed! I’m striving to become like that as fast as I can, haha.

Peaches are one of my favorite fruit to use in desserts. It’s been like that since I made my peach and apricot galette that (I probably shouldn’t say that) I maaaaybe like even more than the peach cobbler, haha. They are both amazing, so you can’t go wrong actually.

Enough talk. This dessert is very juicy, the peaches are perfectly sweet and fragrant because of the spices and the amazing crumbly texture of the dough makes this dessert a keeper. Give it a try, you won’t regret it :).

Ingredients

Dough
190 g flour
50 g sugar
3/4 tsp salt
2 tsp baking powder
120 g cold butter
80 g heavy cream

Fruit
900 g peaches, peeled and pitted
50 g sugar
50 g brown sugar
1 3/4 tbsp cornstarch
1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
juice of 1/2 lemon
1 tbsp orange liqueur (optional, I used Cointreau)

Instructions

Dough
Preheat the oven to 190°C. Combine the flour, sugar, salt and baking powder in a food processor and mix for a few seconds. Add the butter in pieces and blitz a few times, until you get a mixture that resembles breadcrumbs. Alternatively, mix the dough with your hands (that you should keep cold). Add the heavy cream and mix just until combined.

Fruit
Cut the peaches into medium sized wedges. Add all the other ingredients and mix well.

Assemble
Put the fruit in a baking dish (mine was oval 30 x 21 cm) and distribute the dough on top. Bake for about 45 minutes, or until the fruit is bubbling and the topping is a golden brown colour. Let it cool for a bit and then serve. People say it should be served with ice cream or whipped cream so you can try that too :).
