Peach Cobbler
Peach cobbler is a very juicy dessert, the peaches are perfectly sweet and fragrant because of the spices and the amazing crumbly texture of the dough makes this dessert a keeper. Give this classic dessert a try!

Dough
- 190 g flour
- 50 g sugar
- 3/4 tsp salt
- 2 tsp baking powder
- 120 g cold butter
- 80 g heavy cream
Fruit
- 900 g peaches peeled and pitted
- 50 g sugar
- 50 g brown sugar
- 1 3/4 tbsp cornstarch
- 1/2 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp nutmeg
- juice of 1/2 lemon
- 1 tbsp orange liqueur optional, I used Cointreau
Dough
Preheat the oven to 190°C. Combine the flour, sugar, salt and baking powder in a food processor and mix for a few seconds. Add the butter in pieces and blitz a few times, until you get a mixture that resembles breadcrumbs. Alternatively, mix the dough with your hands (that you should keep cold). Add the heavy cream and mix just until combined.
Assemble
Put the fruit in a baking dish (mine was oval 30 x 21 cm) and distribute the dough on top. Bake for about 45 minutes, or until the fruit is bubbling and the topping is a golden brown colour. Let it cool for a bit and then serve. People say it should be served with ice cream or whipped cream so you can try that too :).
