Snowballs

These cute, little cookies are a delicious winter treat. The texture is very light and crumbly with crunchy nuts. After that, they melt in your mouth.

You can use toasted almonds, walnuts, pine nuts, pistachios or hazelnuts. You could also substitute the nuts with chocolate chips and use various spices, but today I’m presenting roasted hazelnuts snowballs. I’ve made them with every nut and I can tell you, every version is delicious so you can’t really go wrong!

They are also known as mexican wedding rings and russian tea cakes. I first made them last year with a recipe I got on the internet. Since then, I looked at various sites and recipes, but there is hardly any difference in them and this one is no different. But it doesn’t matter, I adore them and they deserve to be presented here on my blog, for me and people who haven’t come across them yet. Make them!

Also, they are easy to make with few ingredients. Even though they look very sweet because of the sugar on top, they really aren’t overly sweet, just about right, if you ask me.

Ingredients

230 g softened butter
65 g powdered sugar
280 g flour
1 tsp vanilla extract
1/4 tsp salt
100 g roasted and chopped hazelnuts

+ powdered sugar for rolling

Instructions

Mix butter with powdered sugar and vanilla extract with an electric mixer until light and fluffy, about 4 min. Add flour and salt, mix just until combined, then add the nuts and mix again to distribute. Cover the dough with plastic wrap and chill for at least 1 h.
When you are ready to roll the balls, preheat the oven to 175°C and line a baking sheet with parchment paper. Take a tablespoon of the dough and make a ball. Place it on the prepared baking sheet. Do this to the rest of the dough and bake the cookies for 7-8 min. The cookies will still be light and a bit brown on the bottom.

Leave the cookies to cool a bit. When they are still warm, roll them in powdered sugar and leave to cool completely. Then roll them in powdered sugar again.

Kepice

Zapadel je prvi letošnji sneg in s seboj prinesel te kepice! To so zelo krhki piškotki z maslenim in oreščkastim okusom. Kljub temu, da mogoče izgledajo presladki, pa niso. Enostavni so za pripravo in iz malo sestavin. Namesto lešnikov lahko uporabite katere druge pražene oreščke ali koščke čokolade.

Sestavine:

230 g masla na sobni temperaturi
65 g sladkorja v prahu
280 g moke
1 žlička vanilijevega ekstrakta
1/4 žličke soli
100 g praženih in nasesekljanih lešnikov.

+ sladkor v prahu za povaljanje piškotov

Priprava:

Zmešaj maslo, sladkor v prahu in vanilijev ekstrakt z električnim mešalnikom, dokler ni maslo kremasto in bolj svetle barve, približno 4 minute. Dodaj moko in sol, zmešaj dokler se vse skupaj ne poveže, nato vmešaj še oreščke. Prekrij maso s prozorno folijo in daj na hladno oz. v hladilnik za 1 uro.
Ogrej pečico na 175°C in na pekač položi papri za peko. Iz mase naredi kroglice v velikosti oreha, približno žlica testa. Peci 7-8 minut. Piškoti bodo na zunanji strani še svetli, spodaj pa rahlo rjavi. Pusti, da se malo ohladijo. Še tople povaljaj v sladkorju v prahu, nato jih ohladi. Ko so ohlajeni, jih še enkrat povaljaj v slakorju v prahu.
